How to Make Potato Salad - Recipes For Mid West and Boston Salads

A healthy potato salad can be the basis of a deliciously healthy meal.  Here you'll find two delicious and easy recipes to make a couple of different but equally yummy potato salads. 

When making potato salad, red potatoes are the best choice of spuds to use, as they keep their shape better than other potatoes.

Firstly boil and cook your potatoes in water.  You'll need 3 potatoes for each of these recipes.  Then remove the potatoes from the water and let them stand for about 15 minutes or so to cool down a bit.      

Whilst cooling you can get to chopping some of your ingredients.  And talking about ingredients, this is what you'll need.

 

Mid West Potato Salad

Ingredients for the Salad Mix

  • 3 Potatoes
  • two onions.  
  • 2 radishes, 
  • 2 sticks of celery, 
  • 2 slices of pickle, 
  • 3 eggs

Dressing Ingredients

  • 2 tablespoons of pickle juice
  • 2 tbsp of apple cider vinegar, 
  • A squirt of mustard, 
  • 7 tablespoons of mayonnaise, 
  • 1 tbsp of sugar
  • 3 tbsp of milk
  • salt, 
  • pepper 

 

For the onions, you can use normal white onions, or even better, red onions.  To prepare you main salad mixture, firstly finely chop your onions and place these in a bowl.  Cut each of your radishes in half, then slice these halves into semi-circular slices and add to the bowl. Do the same to your potatoes. Chop your pickles, celery and eggs, and add these to the bowl too.

Now to make the dressing.  In a sealable jar, place 7 tablespoons of mayonnaise, then add three  tablespoons of milk, two tablespoons of pickle juice, two tablespoons of apple cider vinegar,  a squirt of mustard, 5 shakes of pepper, 2 shakes of salt and a tablespoon of sugar.  Then place the lid on the jar and give the entire mixture a very good shake.  Pour your combined dressing over your potato salad mix and stir everything together to complete your scrummy Mid West potato salad.

 

Boston Potato Salad

Salad Ingredients

  • 3 Potatoes
  • One green pepper, 
  • A stick of Celery, 
  • One onion, 
  • 2 boiled eggs

 

Dressing Ingredients

  • 8 tbsp mayonnaise
  • 4 tbsp pickle juice
  • 1 tbsp dry mustard
  • 1 teaspoon of mustard
  • Pepper

Chop the celery and place in a bowl.  Then chop your green pepper and add to the celery in the bowl.  Next for the chop is your two-thirds of an onion.  Like the recipe above, you can use a white onion if you choose but a red onion will give you a better result.  Cut your potatoes in half, then cut these halves into semi-circular slices. Then dice 2 boiled eggs and add to your salad mixture. 

For the dressing, use a separate medium sized bowl to combine 4 tablespoons of pickle juice, a tablepoon of dry mustard and 5 tablespoons of mayonnaise.  Add a teaspoon of sugar and 10 shakes of pepper.   Pour this over your potato salax and mix it all around.  Then once the salad and dressing is mixed, as a final touch, add three heaped tablespoons of mayonnaise on top.  Mix around again and your potato salad is ready to serve.
